UPIC was odd...I recall the software being available for some time in the 1990s, but I avoided it because 1) it was hella spendy and 2) I had a bad feeling about the abilities of the tech at the time being able to handle it.
OTOH, now we have Iris2...which is kindasorta the same thing, since you can input visual data and then convert it to audio spectrographic data for the engine to gnaw on.

There is also the free (for Windows/Mac/Linux) or cheap (for iOS/Android) VirtualANS from the developer of SunVOX. VirtualANS is a software emulation of an old Russian machine that turned images into sound as well. I was playing around with TouchDesigner and trying different ways to turn graphics into sound. I enjoyed these pieces I made by just scanning repeatedly along a row of pixels and turning it into a sound wave. It was used in a performance with a friend on a cold winter solstice evening and involved soup recipes and scandinavian knitwear.
