Some of the AE modules have the ability to accept both Audio and CV signals on their inputs. Then there is a switch to select CV / Audio.
What does the switch do ?
Since all signals are 0-5V my (not very qualified) guess is that it is just AC coupling or DC coupling and the switch simply switches a capacitor in/out of the input line ?
Is that correct ?
If so, what value capacitor is used ?

Basically you are right:-) For Audio, a capacitor is into the input line, followed by a voltage divider that forces the 2.5 volts offset. The schematic:
